Chemical composition in Asparagus: The known components are water 90-95% glucid 1.70-2.50% lipid 0.10-0.15%, protid 1.60-1.90%, cellulose 0.55- 0.70%, vitamins A, B1, B2, C, about 10% minerals with manganese, iron, phosphorus, potassium, calcium four, brome, iodine, some tannin, a saponosid whose genin is sarsasapogenin; young shoots contain asparagine, coniferin, some rutosid (more abundant in green parts) and anthocyamosid stains and a sulfur-containing substance that may be a methylsulfonium derivative of methylmercapten (methanethiol) with an unpleasant odor. There are sarsasapogenin coniferin, chelidonic acid, mannit, asparagin, and potassium salts in the roots.
