We plant, grow, harvest, clean, and pack this wheat ourselves. No outside service or middleman and no re-sellers. Every bag you get is direct from the farm. My wife uses these wheat berries whole or to make flour and we use them in our recipes all the time. Soft White Wheat has a low protein content, which makes it best for flatbreads and quickbreads. We grind this into flour for making muffins, pancakes, cakes, cookies, and many other recipes! We can also cook it up for cereal or to put as a bean replacement in chile. Protein content of our wheat is 8.6%. We grow our wheat without the use of desiccants. Like all wheat grown in the U.S.A. ours is Non-GMO. Sproutable.
